Processed/Analogue Cheese

In traditional processed cheese formulas the desired cheese flavor comes from the specific variety of cheese used as a raw ingredient.

This is not practical in all cases:

  • When using natural cheese, the flavor can only be standardized up to a certain point.
  • A large portion of the flavor components will be lost due to the high temperatures needed for the production of processed cheese.
  • Frequently the cheese flavor is not strong enough to allow the final product a characteristic flavor profile.
